What does Huusk make?

Kitchen knives, and the things that go with them: chef, gyuto, santoku, nakiri and kiritsuke blades; Serbian cleavers and butcher knives. Boning and fillet knives. Paring and utility knives. Steak sets. Poultry and kitchen shears. Blocks, rolls and multi-piece sets, and a small outdoor shelf of folding and fixed blades. Nine shelves, one question asked nine ways.

How long has Huusk been around?

Since 2021. That is the earliest date this catalogue can show for itself, and it is the only figure on this site that we state about ourselves rather than about a knife.

What are you paying for in a Huusk knife that a supermarket one lacks?

The geometry behind the edge, and the tang. A stamped knife is cut from sheet steel and is the same thickness most of the way to the edge, so it wedges food apart instead of parting it. A forged blade is drawn out thicker at the spine and thinner behind the edge, and that is what takes it through a tomato skin without pressure.

The tang is the other half. A full tang runs the whole length of the handle instead of stopping an inch in, so the join never becomes a hinge and the balance sits where your hand is rather than out at the tip.

Is Huusk a Japanese brand?

The knives are made in the Japanese tradition and the range is named in it: gyuto, santoku, nakiri, kiritsuke. What that means concretely is a thinner grind and a harder steel than a European chef knife carries, which buys a keener edge and costs you some forgiveness when the blade meets bone or gets twisted.

Who is a Huusk knife for?

Anyone who cooks on a board more than twice a week. The difference between a forged blade and a drawer knife shows up in the ordinary work, on an onion, a chicken breast or a butternut squash, and it does not show up at all if the knife only ever cuts a sandwich.

It is also, unglamorously, for people who will dry a knife. High carbon steel takes the best edge here and rusts if it sits wet, and that habit matters more than which of these you choose.

What does Huusk refuse to print?

A hardness figure, because hardness is not in our product data and a number without a source is worth nothing. A test result we did not read in a public document. A certificate nobody issued us. Where a claim needs an outside authority, that authority is named with the date we read it.
