Small blades for the hand rather than the board: paring, bird’s beak, peeling and five-inch utility knives.

These are the cheapest knives on the site and the ones people say they pick up most. Two and a half to five and a half inches, small enough to work against your thumb.

The bird’s beak is the odd one and worth explaining: the edge curves the wrong way, inwards, so it follows the round of an apple or a potato instead of fighting it. A straight paring knife is better for anything you do on a board. If you are buying one of each you will use both, and they cost less together than most single chef knives.

What will you use a Huusk bird’s beak paring knife for?

The edge curves inward, so it follows the round of an apple, a potato or a shallot instead of fighting it. Peeling, coring and turning vegetables are what it does. Anything you would do flat on a board it does badly.

Do you need a paring knife if you own a Huusk chef knife?

A chef knife is for the board. A paring knife is for the work you do holding the food in the other hand: hulling strawberries, taking the eye out of a potato, cutting string. They are the cheapest knives on this site and the ones people say they pick up most.

What blade length do you want in a Huusk utility knife?

Five to five and a half inches. Long enough to go through a sandwich loaf or a large tomato, short enough that you still control it with your fingers rather than your arm. Below four inches you are into paring territory. Above six you may as well use the chef knife.
