A paring knife is the one you use holding the food rather than laying it down: hulling strawberries, taking an eye out of a potato, peeling an apple over the sink. Anything round. The edge curves inward so it follows the surface of an apple, a potato or a shallot as you turn the food against it. Coring, peeling and turning vegetables are what it does. Laid flat on a board it is the wrong shape.
Buyers say it is the knife they pick up most, and it costs a fraction of the one on the board. A chef knife is for the board and needs two hands and a surface. A paring knife works in the air, in one hand, for the dozen small jobs that happen between the real cooking.
Three and a half inches if you are buying one. The two-point-seven inch blades are for detail work and for a small hand. Five and five and a half are utility blades that will do a tomato or a sandwich and are less comfortable for peeling.
