01Layers you can see, an edge you cannot · 12 pieces
Twelve Damascus blades from five to eight inches, across chef, santoku, nakiri, boning and utility shapes.
Damascus is two steels forge-welded, folded and etched so the boundary between them shows as a pattern. The pattern is real rather than printed, and it is worth knowing what it does and does not mean: the cutting is done by the hard core inside the cladding, and the layers are structure and appearance. A Damascus blade with a poor core is a beautiful knife that goes blunt. A plain blade with a good core will out-cut it every time.
Twelve pieces carry it here, and they are spread across shapes rather than concentrated in one: seven chef and santoku blades, a nakiri, an eight-inch boning and brisket trimmer, a five-inch utility knife and a three-piece set. Blade lengths are five, seven and eight inches. They are among the more expensive things in this catalogue, and the honest reason to choose one is that you want to look at it, which is a perfectly good reason for an object you pick up every day.
3 blade lengths, each one a link to the card that carries it.
3 handle colours, named from our own product data rather than read off a photograph.

03Asked before ordering
What people ask us about damascus knives before they pick one.
Not because of the layers. The edge belongs to the core steel inside the cladding, and a well-made plain blade with the same core cuts identically. Buy Damascus because you like the pattern and the core is good, not because the layers do the cutting.
The pattern is the boundary between two steels running through the metal, so it cannot rub off. What can fade is the contrast, because the etch that darkens one layer is a surface treatment. Acidic food and abrasive scrubbing dull it over years.
Hand wash, dry straight away, and hone on a rod rather than reaching for a stone every time. Keep it away from bone and away from twisting: the harder the core, the less it bends before it chips.
