Eighteen long blades from six to twelve inches, for brisket, roasts and anything that has to come off in even slices.
A slicing knife is long for one reason: a slice should come off in a single pull. Sawing at a brisket with an eight-inch chef knife is what produces the ragged edge and the shredded corner, and it happens because the blade runs out of length halfway through and you have to reset. Ten, eleven and a half and twelve inch blades on this page all exist to avoid that reset.
The other feature that matters is what stops the meat sticking to the blade. Some of these carry a granton edge, the row of oval scallops ground into the flat, which breaks the vacuum between a wet slice and the steel so the slice falls away instead of clinging. Eleven and a half inches is the length people who smoke brisket keep coming back to, and it is also long enough to be useless on an onion, which is the honest trade.

What people ask us about carving and slicing knives before they pick one.
Eleven inches or more. A brisket is wider than most people expect, and a blade that has to be reset halfway through leaves a step in the slice. Twelve inches is not too long for a full packer.
The scallops ground into the flat hold small pockets of air, which breaks the suction between a wet slice and the steel. The slice falls away from the blade instead of folding over and sticking to it. It does nothing for sharpness.
Not comfortably. A twelve-inch blade has no manoeuvrability on a board and the tip is a long way from your hand. It is a specialist knife, and it earns its drawer space if you cook roasts and smoke meat rather than if you chop vegetables.
