A butcher knife is a blade with a job you can name: separating a primal, trimming a fat cap, breaking a shoulder down into things that fit a pan. The lengths here run from seven inches, which is a trimming size you use with your other hand on the meat, up to eleven and a half, which is a breaking blade you use with your whole arm. Nothing on this page is a general-purpose kitchen knife, and none of it should be your only knife.

A butcher knife slices and separates. A cleaver chops through. The butcher blade is longer and narrower so it can follow a seam between muscles, and it will chip if you swing it at a bone. The cleaver is short, heavy and blunt-shouldered, and that is what lets it go through a rib.
