Six to eight inches for anything with a bone in it. The three-and-a-half inch blades on this page are mini choppers for garlic, ginger and shallots and will not do a chicken back. If you want one cleaver, take a six.
People do, and reviewers say they end up using it on vegetables more than on meat. What it will not do is fine slicing: the grind behind the edge is built to push through rather than to part, so a tomato needs a thinner blade.
