A nakiri does one job and no others, and it is the best thing in this catalogue at that job. The edge is dead flat and the blade is squared off at the tip, which means every part of the edge reaches the board at once and nothing gets crushed at the end of the stroke. There is no point, so it will not core an apple or trim a joint. It chops vegetables, and it makes a pile of onion look like it came out of a restaurant.

All seven pieces here are seven-inch blades, and the Damascus versions carry a layered pattern with the working edge in the core. Four of them are folding knives, which sounds like a contradiction until you have taken one to a campsite and cut vegetables on a picnic table. If you already own a chef knife and cook a lot of vegetables, this is the second blade worth the drawer space. If you own nothing, buy the chef knife first.

What will you use a Huusk nakiri knife for?

Vegetables, and only vegetables. The flat edge and squared tip are built to chop straight down on a board with the whole edge landing at once. It has no point, so anything that needs a tip, whether coring, trimming or boning, belongs to another knife.

Should you buy a Huusk nakiri or a santoku?

No. A santoku has a slight curve and a dropped tip and will handle meat. A nakiri is flat and blunt-ended and will not. The santoku is the one to buy if it is replacing your chef knife, the nakiri if it is joining one.

Can you cut meat with a Huusk nakiri knife?

Boneless meat, at a push, but it is the wrong tool. There is no tip to start a cut with and no belly to slice on, so you end up pressing. Use the chef or santoku blade for that and keep the nakiri sharp for the vegetables.
